There is nothing quite like drinking a margarita with fresh lime.  Perhaps it’s because I grew up in California, and now I live in Arizona, or perhaps it’s because I have always loved Mexican food, but a margarita might be my favorite drink of all time.

A margarita is a simple and delicious as it gets.  All you need on hand are limes, tequila, and homemade orange liqueur.  The orange liqueur takes a little thinking ahead, but I promise you that it is so worth it.  Orange peels steeping in rich Cognac, then sweetened with honey or coconut sugaryum!

Slightly sweetened with rich whole cane sugar and orange zest, this Irish soda bread is my favorite combination of flavors I have tried during these St. Patrick’s Day celebrations.  I cannot imagine a better Irish treat than a piece of soda bread fresh out of the oven, studded with plump raisins and slathered with bright yellow butter.

Anti-Diet Challenge, Day 13: Parmesan Potato Rounds

The Anti-Diet Challenge 2014 forges ahead.  We don’t do kale chips or cleanses.  We don’t do body shaming comparisons to celebrities or other, skinnier friends.  We don’t vilify certain foods, like carbs and/or gluten and/or grains, and blame them for all our woes.

We just learn to love our bodies, to eat more to feel more energy and even to get slimmer (yes, you read that right), and to let go of all the rhetoric about how our bodies aren’t enough, that we don’t deserve to take up space, that we should look a certain way, that certain foods are bad and others are good, and that food is something to be feared and used as an emotional weapon.  Enough is enough.

Reject diets.  They are part of disordered eating.  The cycle of calorie restriction, losing weight, returning to normal caloric levels, gaining weight back, rinse, repeat: this is madness.

Instead, eat more potatoes.  They make your body warm, they benefit your metabolism, and these particular potatoes are loaded with grass-fed cheese and butter, unrefined salt and organic spices, and just make you feel good! [Read more…]
